Wendy's Apple Pecan Chicken Salad Recipe | Food
Ever since I stumbled upon Wendy's Apple Pecan Chicken Salad I've been obsessed! It's that good. The only issue is the fact that it can be a little pricey about 5 bucks for a small half size and $8 for the full. The problem with paying that much for a salad is knowing that I'll be hungry again in an hr or 2.
So I thought why not recreate it for less than half the price and I think I did a pretty good job with my copy cat.
Here's what you will need:
- Mixed greens
- Chicken breast
- Gala and Green apples
- Blue cheese crumbles
- Chopped pecans
- Pomegranate Vinaigrette (I used raspberry)
Prepare chicken breast by seasoning to your liking and grilling. I cooked my chicken on a griddle but it can also be cooked on the stove or baked.
If you're unable to find roasted pecans (I wasn't), place chopped pecans on a lined baking sheet, lightly coat with olive oil and brown sugar and bake at 350deg for about 10min.
Add all ingredients on top of your mixed greens and enjoy! Super easy and super yummy!
These ingredients ran me about $20 and I was able to make at least 4.5 full size salads with a little left over. That's saving me about half of what I would spend purchasing them at Wendy's. So get in the kitchen and make your own!
